Delightful Veggie Biryani with Cold Pressed Sunflower Oil

Recipe: Vegetable Biryani with Pinkcity Wellness Cold Pressed Sunflower Oil

Ingredients:

• 1 cup basmati rice
• 2 tablespoons Pinkcity Wellness Cold Pressed Sunflower Oil
• 1 large onion, thinly sliced
• 1 teaspoon cumin seeds
• 2 bay leaves
• 4 cloves
• 4 cardamom pods
• 1 cinnamon stick
• 1 teaspoon ginger-garlic paste
• 1 cup mixed vegetables (carrots, peas, potatoes, beans), diced
• 1 large tomato, chopped
• 1/2 cup yogurt (optional for a vegan version)
• 1 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 teaspoon garam masala
• Salt to taste
• 2.5 cups water
• Fresh coriander leaves, chopped for garnish
• Fresh mint leaves, chopped for garnish
• Saffron strands soaked in 2 tablespoons of warm milk (optional)

Instructions:

1. Rinse and Soak Rice:
• Rinse the basmati rice in water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
2. Prepare the Aromatics:
• Heat 2 tablespoons of Pinkcity Wellness Cold Pressed Sunflower Oil in a large pan or pressure cooker over medium heat.
• Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté until the spices release their aroma.
3. Sauté Onions:
• Add the thinly sliced onions and sauté until they turn golden brown.
4. Add Ginger-Garlic Paste:
• Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
5. Cook Vegetables:
• Add the diced mixed vegetables and sauté for a few minutes until they start to soften.
6. Spice and Tomato:
• Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and blend well with the spices.
7. Yogurt (Optional):
• If using yogurt, add it now and mix well. Cook for a few more minutes.
8. Add Rice and Water:
• Add the drained basmati rice to the pan and mix gently.
• Pour in 2.5 cups of water. If using saffron milk, add it now.
9. Cook the Biryani:
• Bring the mixture to a boil, then reduce the heat to low. Cover and cook until the rice is fully cooked and the water is absorbed (about 15-20 minutes). If using a pressure cooker, cook for one whistle and then turn off the heat.
10. Finish and Garnish:
• Once cooked, fluff the rice gently with a fork.
• Garnish with fresh coriander and mint leaves.
11. Serve:
• Serve the vegetable biryani hot with a side of raita or any curry of your choice.
